there are multitudes of fritter recipes out there. every starchy vegetable can stand in as the star.  it is so easy to mess up the texture of fritters causing them to fall apart or be too heavy. but when you find the right balance of egg, flour, and zucchini, you will never ever look back.

Zucchini Fritters
Recipe type: Main DIsh
Serves: 3-4
 
Ingredients
  • 1 lb zucchini (i used yellow and green)
  • 1 teaspoon kosher salt
  • 2 large scallions, split lengthwise then chopped
  • 1 large egg, beaten
  • ½ teaspoon ground pepper
  • ½ cup all purpose flour
  • 1 teaspoon baking powder
  • 3-4 tablespoons vegetable oil for frying
  • ½ cup sour cream
  • 1-2 garlic cloves, chopped
  • juice from ¼ a lemon
  • zest from ¼ of a lemon
Instructions
  1. Using a food processor or a box grater, grate zucchini into thin strands. Transfer to a large bowl and mix with salt. Let the zucchini absorb the salt for about 10 minutes.
  2. Use a cheesecloth or a clean kitchen towel to squeeze out the excess liquid. This step is crucial to the fritters holding together. (I used a kitchen towel and placed two heaping spoonfuls of zucchini, wrapped and squeezed. Each handful had about ¼ cup of water come out, so don't skip this step).
  3. Preheat oven to 200.
  4. Combine zucchini with scallions, egg, pepper, flour, and baking powder and mix well. Heat 1-2 tablespoons of oil in a cast iron pan. Once oil is hot, drop large spoonfuls of zucchini mixture into the pan and flatten them out with your spatula. Cook on each side for 1-3 minutes, taking care not to burn the fritters.
  5. Transfer fritters to baking sheet, and bake for 10 minutes to finish crisping the edges.
  6. While the fritters are in the oven, prepare the sauce. Combine sour cream, garlic, lemon juice and zest in a small bowl and whisk together. Serve fritters with a dollop of sauce for ultimate happiness.
