when it comes to dessert, dates may not be the first thing that comes to mind. but stay with me here.
dates are already naturally sweet, so they don’t require much manipulation. just a little ricotta mixed with citrusy zest and a touch of vanilla. a perfect light dessert after a heavy meal, which we seem to be having a lot of this winter.

Sweet Ricotta Stuffed Dates
Recipe type: Dessert
Serves: 10-15
Ingredients
- 1 cup whole-milk ricotta
- 1½ tablespoons orange zest
- 1½ tablespoons lemon zest
- ½ teaspoon vanilla extract
- 20-25 medjool dates
Instructions
- Combine ricotta, orange zest, lemon zest, and vanilla extract.
- Using a knife, slice an opening in the date (without cutting in half) and remove the pit.
- Open up dates slightly with fingers and spoon ricotta into opening.
- That's it, enjoy!
