I honestly don’t know how we’re going to eat the entire contents of the CSA this week.
Usually we split the share, but our CSA partner is out of town, so we get to keep the whole thing. It’s a beautiful problem to have, and I am determined not to let a single leaf go to waste. Here’s what we got this week:
And here are my ideas:
- The beets, carrots, and delicata squash will go into a root vegetables/squash hash. Maybe fry an egg on top?
- The kohlrabi is getting the same treatment as last time: this slaw salad with apples and walnuts.
- A small acorn squash that I’m thinking will hold over until next week. Then I’ll make a plan for this guy.
- Leeks to be made into a salmon and leek soup I’ve been eyeing up for a while.
- A big head of kale for wilting into rice bowls, something like this.
- Ooo, a new one: black radishes. I’ve never cooked with them before, but from what I know, the flavor can be quite strong. I’m going to try slicing them super thin and then baking them into chips to dip in hummus or other things.
- A mix of different kinds of potatoes, which will be roasted underneath a whole chicken (photos desperately need retaking).
- And last but not least shallots. These are just something I like to have around to flavor up any dish. No specific plans.
