Guess what’s back?
My weekly farmer’s market and CSA series posts, showing you all the wonderful things that are growing in Wisconsin which will soon be in my belly.
If you hung out with me last year, you’ll remember that we shared a full share CSA from King’s Hill Farm with a friend. This means that every week, we got a surprise basket of farm-fresh vegetables that I then had to figure out what to do with. On top of that, we usually stopped by the Dane County Farmer’s Markets on Saturday to fill up on pastries, coffee, and any additional vegetables that were missing from our box that week. We plan to do the same this year.
Having a CSA is both economical and really fun, but it does require that I do some planning. Every Sunday, I sit down and figure out how we’re going to consume all of the delicious food we’ve acquired. I share my plans here.
The CSA will start in a couple of weeks, but here’s our bounty from the market. Starting from the top left and moving clockwise:
- Farm fresh eggs for breakfast all day every day. Or maybe some deviled eggs? I’ve got some ‘nduja from Underground Meats that seems like it’d be a nice pairing.
- A big bag of frost-sweetened spinach. Did you know that frost actually makes spinach sweet? I didn’t. The spinach is so good as is, I’m thinking of slicing it into thin ribbons and using it in a salad.
- A large batch of green onions. Let’s bake these into scones. Or use them in this ginger sauce on top of salmon.
- Ahhh, ramps. The wild leek that’s unique to this part of the country, has a short picking season (3 weeks), and tastes like a cross between a sweet onion and garlic. I’m planning on turning these into a pesto and then using that to smother some roasting potatoes. Other options from local Madison bloggers: bake them into foccacia or mix them in with spätzle.
- Some carrots and beets are perfect for the tacos I’ve been craving again since they showed up in a BuzzFeed list earlier this month.
- Cottage bacon from Pecatonica Valley Farms is always one of our favorites. A good, slightly leaner substitute for regular bacon.
- And last but not least, some chipotle pepper cheddar cheese for snacking or making into grilled cheese sandwiches (with cottage bacon!) for lunch this week.
