Kale and Quinoa Pilaf

Ingredients
- 2 cups water
- 1 cup quinoa
- 1 bunch kale, chopped
- ½ lemon, zested and juiced
- 2 scallions, chopped
- 1 cup mushrooms, chopped
- 1 tablespoon walnut oil
- 3 tablespoons pine nuts, toasted
- ½ cup goat cheese
- salt and pepper to taste
Instructions
- Bring water to a boil. Add quinoa, cover, and simmer for 10 minutes.
- Add kale to pot and steam for 5 minutes.
- In a separate pot, combine lemon juice, scallions, mushrooms, oil, and pine nuts. Cook for 5-10 minutes, until mushrooms are done. Add in goat cheese and salt and pepper.
- Add quinoa mixture to vegetables. Mix well and serve.
