breakfast is without a doubt my favorite meal of the day.
and while i have my usual rotation of bagel with cream cheese and lox, greek yogurt with jam and granola, and cereal…
sometimes wednesday calls for something new. this savory, salty, full of flavor bowl of oatmeal will keep you warm and stick to your ribs for the rest of the day. in a good way.
Steel Cut Oats with Poached Egg, Leeks, and Feta

Ingredients
- ¼ cup steel cut oats
- ¾ cup water
- 1 egg
- ½ tablespoon butter
- ¼ cup leek, chopped
- 2 tablespoons feta, crumbled
- salt and pepper to taste
Instructions
- Bring ¾ cup water to a boil. Add oats, stirring frequently until oats are cooked (about 8 minutes).
- Meanwhile, melt butter in small pan and cook leeks, about 5-6 minutes.
- Transfer oats to a bowl and top with leeks and feta.
- In a separate pot, bring water to a boil and reduce heat. Crack an egg into a measuring cup (or other small dish) and slowly drop the egg into the water. Poach for 2½ minutes. Use slotted spoon to remove egg and place on top of oats. Salt and pepper to taste.
