happy monday everybody. today, i went to the dentist and didn’t have any cavities.
even as an adult there is something satisfying about that, no? one thing that always gets me at the dentist is the variety of flavors of toothpaste they have: orange, bubblegum, raspberry, or mint. does any self-respecting adult choose bubblegum? yikes. i’m always straight mint.
today we stick with healthy and delicious – a roasted cabbage with spicy lime dressing, with some salmon to fill out the meal. per jason, “jackpot.” i tend to agree.
Roasted Cabbage with Spicy Lime Dressing
Recipe type: Side Dish
Serves: 3
Ingredients
- 1 head green cabbage
- 3 garlic cloves, minced
- ¼ cup canola oil
- ¼ cup olive oil
- ¼ cup lime juice
- 1 teaspoon fish sauce
- ¼ cup fresh cilantro, minced
- ½ teaspoon salt
- ½ teaspoon cayenne pepper
- ¼ teaspoon sugar
Instructions
- Preheat your oven to 425.
- Cut cabbage head in half, making sure to split the core evenly. Cut each half into four wedges, taking care to leave some core on each so the wedges stay together. Place wedges in a single layer on a baking sheet and brush with canola oil on both sides.
- Place cabbage in oven. Cook for 30 minutes, flipping halfway through.
- While that is in the oven, make the dressing. Cook garlic in a little bit of olive oil. Whisk together remaining olive oil, lime juice, fish sauce, cilantro, salt, cayenne pepper, and sugar. When serving, pour dressing over cabbage.

writes BonnieYou can usually find it at most grocery stores (near the soy sauce). If not, you may need to go to a specialty store or Asian grocery store. They would definely have it.
