this thing has been all over the internet.
quite literally, i’ve seen it on at least six different food blogs that i read in the last two weeks.
why so popular? there is always an appeal to making something incredibly simple from good, seasonal ingredients. the fact that it comes together in less than 15 minutes is also a plus. and it makes for pretty photos.
so i jumped on the bandwagon. thanks martha.
One Pot Pasta

Ingredients
- 3½ cups chicken broth
- 12 oz spaghetti
- 12 oz cherry or grape tomatoes, halved or quartered
- 1 onion, thinly sliced
- 4 garlic cloves, chopped
- ½ teaspoon red pepper flakes
- 2 large sprigs of basil, plus more for garnish
- 2 tablespoons olive oil
- 1 teaspoon salt
- ¼ teaspoon freshly ground pepper
- 1 cup parmesan cheese, grated
Instructions
- Combine broth, pasta, tomatoes, onion, garlic, red pepper, basil, olive oil, salt and pepper in a pot large enough that the pasta can lay flat. Bring to a boil over high heat.
- Using tongs, stir and turn the pasta so it doesn't stick to the bottom. Cook for about 9 minutes until most of water is absorbed.
- Garnish with additional basil and parmesan cheese.

I was so inspired by your beautiful photos, that I tried this out myself this weekend! I used low sodium chicken broth instead of water and added mushrooms and it turned out great.
