this weekend, my friend anne hosted her second annual tea party.

the girl knows her tea far better than most people i know, so in addition to it being delicious it is also very educational.

in order to spare herself from going totally crazy preparing for the party, anne always assigns certain people to bring treats to feed all the overly-caffeinated women that attend the party. this year, i was responsible for cookies. cookies, as you may already know, are not my specialty, but this recipe was a must-try. i love cherries, dark chocolate, and pistachios way too much to not at least attempt to bake them into a cookie.

and so i did. and while they didn’t look as perfect as i wanted them to, they tasted wonderful, and were a nice addition to everything else we ate.

Cherry, Dark Chocolate, and Pistachio Cookies
Recipe type: Dessert
Serves: makes 24-30 cookies
 
Ingredients
  • 2½ cups all purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • 6 tablespoons butter, cut into pieces
  • ¼ cup canola oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup dried cherries, chopped
  • 2 ounces dark chocolate, chopped
  • ½ cup pistachios, chopped
Instructions
  1. In a large bowl, combine flour, baking soda, and salt.
  2. Using a mixer, beat together sugar, butter, and oil until smooth. Add in eggs and vanilla.
  3. Add flour mixture to wet ingredients, a little at a time, mixing at low speed until fully combined. Stir in cherries and chocolate.
  4. Remove the dough from the bowl, divide in half, and roll into 2 logs about 2 inches thick. Cover in plastic wrap and put in freezer for at least an hour.
  5. Preheat oven to 350.
  6. Remove dough from freezer. Spread chopped pistachios on cutting board or flat surface and roll dough logs in them, pressing gently so the nuts stick to the outside of the cookie.
  7. Slice logs into cookies, about 12-15 per log and place on a parchment covered baking sheet (you'll likely need two baking sheets).
  8. Bake for 12-14 minutes, until golden.
