Have you ever seen the Simpson’s episode where Homer hosts a barbecue?
Lisa tries to convince him to not serve meat. Homer and Bart sing “You Don’t Win Friends With Salad.” Normally, I’d agree. But you can win friends with this salad, I swear. Watch the clip if you haven’t seen it, it’s one of my favorite episodes.
This dish is part salad and part dessert and tastes oh so much like summer. It was consumed during a very pleasant Concerts on the Square, and would go great with any sort of outdoor grilling or picnicking scenario.
We’re just starting to get into the peak season of heirloom tomatoes and of course it’s prime time for watermelon, so this salad makes perfect sense. Add some cucumbers, herbs, a little balsamic vinegar dressing and sit back and enjoy the sunshine.
- 4 small heirloom tomatoes, chopped into ½ inch pieces
- 2 cups watermelon, chopped into ½ inch pieces
- 1 cup cucumber, peeled and chopped into ½ inch pieces
- 1 tablespoon fresh mint, chopped
- 1½ tablespoon fresh cilantro, chopped
- 2 tablespoons olive oil
- 1½ tablespoons balsamic vinegar
- In a large bowl, combine tomatoes, watermelon, cucumber, mint, and cilantro.
- In a small bowl, whisk together olive oil and balsamic vinegar. Pour over salad.
