It’s been quite some time since I made a good stir fry.

But this recipe isn’t a traditional stir fry. It has no rice (gasp), but instead fills you up with a healthy dose of red cabbage.

You’ll start out with a glug of sesame oil to cook your onions and sweet potatoes. Then brown some chicken bits (always use thighs, never white meat) with garlic and ginger.

And only once your stir fry is looking ready to eat do you add the cabbage, giving it just a couple minutes to soften, but still retaining it’s bright color and distinct flavor. To add in some more Asian flavor, you’ll stir in a little hoisin sauce, which will give the dish that salty-sweet flavor that everyone loves.

Go ahead, try something different.

Ingredients
  • 2 tablespoons sesame oil
  • 1 lb sweet potatoes, peeled and cut into ½ inch pieces
  • 1 red onion, chopped
  • 1 lb boneless, skinless chicken thighs, cut into ¼ inch strips
  • salt and pepper
  • 1 tablespoon ginger, minced
  • 3 garlic cloves, minced
  • 4 cups red cabbage, sliced thin
  • 3 tablespoons hoisin sauce
  • cilantro to garnish
Instructions
  1. In a large pan or wok, heat sesame oil. Add sweet potatoes and onions and cook until potatoes are tender, about 12 minutes.
  2. Sprinkle chicken with salt and pepper, then add it to the pan with ginger and garlic. Cook until chicken starts to brown.
  3. Add cabbage and stir fry until it has slightly wilted, about 2-3 minutes.
  4. Stir in hoisin sauce and season with salt and pepper.
  5. Top with fresh cilantro for serving.

    I made this dish for supper last night with a sweet potato and red cabbage from our CSA winter share. We also got red onions and garlic. I just needed to buy some chicken and cilantro. It comes together really quickly and got a definite thumbs up from my husband. I highly recommend trying it.
