I tend to skip posting the super simple recipes.
You know, the two or three ingredients thrown together in one pot or pan that are lovely to eat but don’t inspire eloquence. But, based on the feedback that I’ve gotten from a few avid readers, you want something simple and quick that doesn’t skimp on flavor.
Plus, I’m not feeling very eloquent today.
So here you go, a recipe that fits just that category: mustardy green beans that have just four ingredients.
Like the last green bean recipe, my green beans started out purple. But the purple color is only skin deep, and when cooked with any moisture they turn green. I know, exciting stuff happening in the kitchen.
What you get is a crispy green bean covered with Dijon mustard and just a touch of acid from the lemon juice. Pretty perfect for the 15 minutes you spent on it.
- 1 tablespoon olive oil
- 5 garlic cloves, minced
- 1 lb green beans, chopped into 1 inch pieces
- ¼ cup Dijon mustard
- 2 tablespoons lemon juice
- In a large non-stick pan, heat olive oil. Add garlic and cook for 1-2 minutes. Add green beans and cook for 7-8 minutes until they soften slightly. Stir in mustard and lemon juice and remove from heat.
- Salt and pepper to taste.
