I’ve recently joined a fun little food blogger project.
The Secret Recipe Club is a collaboration between bloggers where we are each matched with a “secret blog.” Our assignment is to find a recipe on this new blog, recreate it, and share our experience. Other than trying new and delicious recipes, it also allows us to introduce each other to new audiences.
For my first month in the club, I was paired up with Elizabeth of Food Ramblings. Much like me, Elizabeth started her blog as a personal project and let it grow into something bigger.
I noticed pretty quickly that Elizabeth has an affinity for polenta (I think I counted about 15 different recipes), so I decided to follow her lead.
This meal cooks up nice and quickly, which means it’s perfect for a weeknight meal. You’ll sauté some onions and garlic until their fragrant and then stir in tomatoes and spinach. In another pan, you’ll fry up polenta rounds in olive oil. Top those with your vegetables, some toasted walnuts, and a drizzle of honey and you’re ready to eat.
- ¼ cup walnuts, chopped
- 2 tablespoons olive oil, divided
- 1 garlic clove, minced
- 1 yellow onion, chopped
- 2 cups cherry tomatoes, halved
- 1 large bunch spinach, stems removed
- 1 18 oz tube of pre-cooked polenta, sliced into ½ inch rounds
- Kosher salt
- Freshly ground black pepper
- 1 teaspoon honey
- In a large saucepan over medium heat, toast walnuts for about 5 minutes. Transfer walnuts to a bowl.
- Turn heat up to medium high and heat 1 tablespoon olive oil. Add garlic and onions and cook until translucent. Add in tomatoes and spinach and cook until spinach has wilted. Add salt and pepper to taste. Turn heat down to low.
- In a separate saucepan, heat remaining tablespoon olive oil. Add polenta rounds and cook until slightly browned on each side. Add additional olive oil if needed.
- Stack 3-5 polenta rounds on a plate. Top with vegetables, walnuts, and a drizzle of honey.
