I’ve been meaning to recreate this recipe from Wisconsin From Scratch for months.
So this month, when I got assigned Sarah’s blog for our monthly All Whisked Up challenge, I didn’t waste time searching the archives (although there are plenty of amazing recipes). I went straight for Bahn Mi.
Bahn Mi is a classic Vietnamese sandwich, but this recipe takes a small twist and turns it into a burger. The patty is made of ground pork and seasoned with fish sauce, sesame oil, garlic, green onion, and Sriracha.
Then there are the pickled accouterments—carrots and cucumber—that marinate in the vinegar as you form and cook the burgers. All that goodness plus a spicy mayo sauce and toppings, this dish was a total hit.
But back to Sarah for a moment here. I’ve been working with her on Whisk for about a year now and the girl knows her stuff. Her background as an engineer compliments her cooking nicely—she’s always learning the science behind the food she cooks and does a great job sharing that with her readers.
And when it comes to spice, I always trust Sarah’s judgement. Just look at the breadth of recipes she offers in this department: Thai Style Stir-Fried Pork, Grilled Sambal Shrimp with Peach Salsa, Spicy Thai Kohlrabi Salad, or Homemade Hot Giardiniera. And that’s just the beginning.
That’s why I knew this recipe would be a complete win. And boy was I right.
- ½ cup mayonnaise
- 1 tablespoon Sriracha
- 1 green onion, finely chopped
- ½ cup carrots, cut into matchsticks
- ½ cup cucumber, seeded and cut into matchsticks
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- ¼ cup rice wine vinegar
- 1 pound ground pork
- 2 teaspoons fish sauce
- 1 teaspoon sesame oil, plus more for cooking
- 3 garlic cloves, minced
- 1 tablespoon green onion, chopped
- 2 teaspoons Sriracha
- 1 teaspoon salt
- 1 serrano pepper, thinly sliced
- small handful cilantro leaves
- 8 small Hawaiian King slider buns
- In a small bowl, mix together mayonnaise, Sriracha, and green onion. Set aside.
- In a medium sized bowl, combine carrots, cucumbers, salt and sugar. Let sit for about 10 minutes, drain liquid, and cover with rice wine vinegar. Let sit while you prepare the burgers.
- In a medium sized bowl, mix together pork, fish sauce, sesame oil, garlic, green onion, Sriracha, and salt. Shape meat into small patties (about 8 sliders).
- Heat sesame oil in a large cast iron pan over medium high heat. Add sliders and cook until pork is cooked through, about 8-10 minutes, flipping halfway though.
- Cut buns in half, spread mayo, and add patty. Top with pickled vegetables, serrano pepper, and cilantro.
