ΒΌ lb morels, thoroughly washed, halved and cut into strips
1 large handful spinach, chopped
salt and pepper to taste
a couple pieces of crusty bread
2 oz goat cheese
Instructions
In a medium sized pan, melt butter over medium heat. Add shallots, and cook until fragrant. Stir in morels, cooking until they soften (about 2 minutes). Add in spinach and cook until wilted (about 1 minute). Remove from heat, season with salt and pepper to taste.
Toast your bread, spread goat cheese on it, and top with the warm vegetables.
